Demon's Souls, it's no graphics king but it's always critizised for its graphics which are actually quiete decent.
Uncharted 1. It's really just Uncharted 2+screen tearing. Some parts even look better IMO
Ratchet and clank A crack in time... and ESPECIALLY wipeout HD FURY...looks better than 2011 games....campzorWipeout HD is gorgeous, but I don't like the racing as much as past wipeout games.
ALL RACING GAMES!!!!! Seriously, whenever we talk graphics for some reason racers are never mentioned and they are usually tech marvels.
Kameo- Saw the demo at target and the next day drove almost 400 mmoles to get an 360 (arcade version)
Blazeblue- I still love great 2D
Motorstorm Apocolypse (I think it is more action than racer)
Mortal Kombat 2011- The art and backgrounds are pure awesome sauce.
Halo Reach- Again- They just updated the look of the series without making it look like a different game.
Mass Effect 2 and Red Dead Redemption deserve a mention.
But the 2 games that should be in every conversation when it somes to graphics are Mirrir's Edga and Wipeout HD/Fury. Games are lookers!
This. Even on consoles, it's gorgeous.Just Cause 2 is highly under appreciated for its graphics, especially on the PC.

This although this is based on the pc version best looking game capcom has made sadly I have no pics since I played through all of it with a 360 controller from my couch.Resident Evil 5.

I second this. Great looking game, which is even more impressive because it runs at 60fps.
I'll throw in Resistance 3 as well, the art is fantastic and the quincunx AA and film grain go extremely well with the art style. Reminds me a lot of Killzone 2.
Mirror's Edge, people always whining about the baked lighting... While Crysis gets praise for being all real time, and managing ugly in a ton of areas.Inconsistancy
More games should use pre-baked lighting. It won't look as good as dynamic in all games, but pre-baked is much higher quality.
And considering developers on the consoles are scrambling for extra power it makes even more sense. :P

the only issue is prebaked lighting means no day/night cycles or destructable environments, because the lighting would have to adapt to those changes.
