I'd be all over that. Also Morrowind (still the best Elder Scrolls game) and the original XCOM with the current engine. Ultima Underworld with something like the Frostbite engine would be amazing too. I'd also like to see Parasite Eve 're-imagined' and Clive Barker's Undying could use a fresh coat of paint as well.
@Renegade_Fury: Yes to a remake of the entire Panzer Dragoon series! Imagine it as a single package with all the games (Saga included). How awesome. :D
Generally speaking, I think that those first 3D console games are most ripe for remaking (Saturn/PlayStation/N64 era), because they have aged the worst (far worse than 8 or 16-bit 2D titles). Panzer Dragoon is a perfect one for that.
I guess I'd also like to see a modern version of something like Burning Rangers - it could be really awesome with modern mechanics and physics.
There is an extremely easy game to remake that would be incredible, so it would get my number 1 vote, and that is Populous: The Beginning. One of the most fun unique RTS's ever made, makes use of a spherical map that would be perfect for VR. Makes use of spells like volcano's and tornado's and tsunami's that could easily create a visual spectacle like you've never seen before, especially on that spherical map. It's a game for which you could easily introduce new elements afterwards. I would personally tweak some of the gameplay. Maybe add more types of buildings. My main complaint would be the building stuff can be a little simplistic. But my family recently played it and it's still a ton of fun. It would be cool if the different tribes all had a unique unit or something. It has everything going for it and nothing against it, except that it's an RTS and it probably wouldn't do well on consoles.
Geist. I already love it a ton on Gamecube, but a polished up remake would be amazing. It's a very unique game too.

Yeah, SEGA can have all my money if they made a Panzer Dragoon collection, lol.
Burning Rangers would be awesome too, because that game would really benefit from having dual analog controls.
None. I prefer to play games in their original form. I like things like GOG on PC for buying cheap old games.
I want remasters or remakes of the whole Panzer Dragoon series, but Saga is the one I want most of all. It's the best rpg I've ever played, and I feel it'd be many other people's favorite as well if it wasn't so rare/expensive to get. Everything about it is top notch, and just imagining it with a graphical update would be a dream come true.

Yeah, the Panzer Dragoon series immediately came to mind, and it's quite frustrating to see such a brilliant franchise forever ignored by SEGA.
Panzer Dragoon Saga is a genuine masterpiece; and i don't want to sound like i'm overrating it, because i'm not trying to. Mechanics-wise the game is just built to be accessible, slick, polished as **** and paced in such a careful way that it never feels tiring. What's personally mind-blowing is just how modern it feels, probably because of how insanely unique everything about the game is.

@DragonfireXZ95: I remember WAveRace that was fun. That reminded me, a remake of Blast Corps would be nice as well. I tried to replay the game via Rare Replay, and I just couldn't as I felt the graphics hadn't aged well at all. Gameplay still fun though, just needs a beefy graphical upgrade with LEaderboard support.
There were a lot of great games on N64 that you couldn't get anywhere else. Between PS1 and that, you were sitting pretty for exclusive games. I had the N64 and PC, which also had a ton of exclusive games. It was a great time, but also a crappy time because you had to spend a crapload of money to play all the games. Lol
