Shenmue. Probably why it's my favorite game

elder scrolls:oblivion.
some of my freinds still won't play this game for some reason but i lost weeks of my life that i will never get back because of this one.
Rainbow Six. Sitting down and reading all the intel after being briefed on a hostage crisis and then assembling the team and planning the mission out including all the go codes and types of entry and routes to the hostage(s) was really immersive.
The only other game I can think of as being as immersive is Flight Simulator, especially flying payware aircraft like the PMDG 737NG (and now the newest one they released for FSX) and planning your flight with real FAA charts, and starting from cold and dark and flying with VATSIM online.
Amnesia or the first Stalker
I get pretty immersed in some competitive games but I think that is different
A more magical and wondrous world I have never seen or experienced in video games in my 20 years of playing them. Game makes me smile every time :)
mmmwksil
heh, I know that game :P
All the following
Thief The Dark Project!!!
Silent Hill 2
Silent Hill - Homecoming (yes the game everyone seems to hate!)
Heavy Rain
Demon Souls
Stalker COP
FEAR
System Shock 2
Ultima Underworld
Elder Scrolls 3 - Morrowind
Red Dead Redemption
Call Of Duty Black Cops... (I kid) :P
Any Looking Glass Studios game. Oh god the atmosphere they were able to create with such primitive technology boggles my mind. When I first got my hands on Shock 2 a few years back I felt myself actually physically leaning to look over things at times which is something I have neverdone in a game before or since. Or in Thief 2 how I often found myself getting really tense when an enemy was alerted and checking near the shadows where I was hidden. There isn't a clear winner because all of them are ridicuously immersive in their own right.
Knights of the Old Republic by far!! When you assemble that light saber and use it for the first time.... Man, Ive yet to play a game that recreate that kind of immersion.
lol srry for not mentioning Metroid:P but i have said i will mention the 1st 5 times that comes to your mind so speak your thought!
It gets a lot of hate, but I have to say Far Cry 2.
The HUD was incredibly minimal and the actions were all very fluid and unbroken, leading to an incredibly singular and immersive experience.
When my gun jammed, I had to unjam it myself. When I'm injured, I have to pry a bullet out of my shin and inject a syrette to stop the pain. I had to do everything myself, plan all my missions myself and in general it was all me choosing to do everything and traveling the beautiful land. Its a shame it had so many odd flaws (in regards to AI and repetition), but in that game I could throw myself in there and bethe mercenary.
It even managed to seem a little more immersive then in a hyper realistic game simply because even on the highest difficulty, I rarely died (always planned ahead and I'm an alright shot), and when I did I almost always had a good buddy ready to ensure I got out ofa hotspot. That immersion would easily be broken if I had to see a reload screen all the time, but don't mistake that for the game being easy because it was damn relentless at times.
It may not be the best game, but it got immersion down to a t and the only way it could be more immersive is if those flaws were fixed, I had more of an impact on the world and if I had to rely on eating and sleeping cycles (like in Fallout: New Vegas' hardcore mode, which also made that game really immersive for me).
Half Life series

Final Fantasy 7
Metal Gear Solid series
Resident Evil 2

Assassins Creed 2
Heavy Rain

Thats what I can think of right now and thats best of the best really.
But Half Life and Shenmue take the cake.
Like someone said, immersive is being in that games universe and being engrossed in the dialogue, story and atmosphere.
Most immersive game is Real Life!
It playes at 4320ep (enhanced progressive), at 240 fps with 128X AA. No loading screens ever, with the most vast draw distances ever, with streaming from area to area so seamless, no matter the distance you walk. And all enhanced by ultra dynamic HDR lighting.
The only drawbacks being no save points or checkpoints, and if you lose a life, there are no extras or resets :P:P
actually from that I voted Bioshock :)
I think the Portal series is the most immersive I have played.
Others include:
Assassin's Creed series
Minecraft
Oblivion
Crysis
