I'm with Conan on this one, it's hard to find games so expertly polished as many 2D games. From my recent memory, Doom (2016) is definitely up there. Not only was it an incredibly well-made game, it was massively well-optimised. It ran on my integrated-graphics laptop built in late 2012 (AMD A8 quad core and HD 7000 series graphics)
Sure, at 50% resolution scaling and low-everything, but it ran at 20-40 fps the whole length of the game enough for me to greatly enjoy and finish the entire thing. If that isn't extreme polish, I don't know what is.
And let's not even bother mentioning >200fps with Vulkan (not on my computer sadly).

I've played Uncharted 1, 2 and The Last of Us. Opinions can be different.
Doom was very well optimized on release. Also I'd say Crysis 2, they worked really hard to make the game run smooth which sadly meant they had to reduce quality of textures, introduce fake physics..etc but I had minimum's of 60fps on max settings, no crashes or anything.
Super Mario Galaxy and Nintendo games in general will very rarely have bugs, slowdown, crashes, etc plus the gameplay is (in the best ones anyway) finely tuned.
My first thoughts as well, especially the Galaxy games. I don't remember encountering one bug in all of my time with both games.

Nintendo Seal of Quality.
Nintendo on Mario, the Portal games, Naughty Dog. I'm sure someone can find some Ai issue in those games, but those games usually run rock-solid and are pushing their respective hardware or at the least the level design is ace as ****. I used to value polish, and I guess I still do, but it's certainly meant less in generations where the better playing games, aren't really pushing hardware. And often do come at the expense of some visual or performance issues: IE Breath of the Wild (I mean by Nintendo standards, that game is a mess, it's only polished by the low ass standards of the rest of the industry), From Software's games (notorious for shit performance on consoles, usually some massive bag or glitch, netcode is usually a hot mess), and like Platinum's work on their good days.
I regard the Resident Evil 1 Remake on the GC to be one of the finest experiences in every aspect that i've ever played. Some hokey script writing keeps it from being absolutely perfect. Great atmosphere, great tension, great art style, no bugs or glitches or visual oddities, it's just great. The complete package
