Mario kart and forza. Each time forza continues to get better. Forza motorsport will probably be the best once it releases next year

Forza Horizon 4 - Best collection of cars
Mario Kart 64 - Balloon Battle mode was incredibly fun

was really a tossup between Forza Horizon 3-4, Burnout Paradise and the original GRID for the final spot. Dirt 2/3 and some of the Need for Speed Hot Pursuit games were also favourites of mine.
Crazy Taxi is by far my favorite though it was not a true racing game. It was more like a strategy game actually, if you really wanted to rack up high scores.

Anybody ever played Super Cars 2 on Amiga? Not a true racing game, but good lord was it fun in two-player mode.
@ermacness: did you ever play any of the other Burnout games? Paradise was such a disappointing follow up to Revenge imo.
Diddy Kong Racing - N64
Mario Kart Wii - Wii (I feel it was the best balanced of the series)
Road Rash Jailbreak - PS1 (sure, you get to beat the crap out of other players, but your goal is still to finish first)
Sorta racing, but not quite, and I wouldn't say it's the best, but it's one I enjoy playing a lot, listening to my own music just to relax so it gets an honorable mention... Rad Racer 2 - NES.

Yes I did, and while Revenge was very great, I liked Paradise more. When I ask the majority of people in my circle who liked Revenge more what about Revenge that you liked more, their main answer was the traffic checking mechanic. If done correctly, I really do find enjoyment in open world games.

Paradise was ahead of its time. It essentially paved the way for the Forza Horizon series.
If all you like to do is click on a game mode, hop into the game, do a few barrel rolls while crashing into oncoming traffic and then immediately being returned to the menu screen, Paradise isn't for you.

F Zero GX
Mario Kart DS may seem like an odd choice but you had to be there. Everyone at high school had the game and a DS. Local 8 player multiplayer in the same room, each with our own screen was beyond mind meltingly fun at the time. Easily best racing experience of my life by a wide margin
