Topic title totally not stolen from Peklo's thread a while back on the chapel...anyways.
So, simply enough, I'm going to host a series of competitions in the form of polls, with two games. I'll list off a brief summary and my personal takes on the game, and you lot can all vote for your favorite. Feel free to post opinions as you wish, or to rebuttle opinions, or whatever. Just keep it clean. After this is over, I think I'll also host a Symphony of the Trite (title credit to the Bonus Level video)
First game to get 10 votes wins, or which ever one has the most votes after 3 days wins
I'll be doing this in (almost) chronological order, skipping Haunted Castle, Vampire Killer, Order of Shadows and NitM. Some games have been moved around slightly to have fan favorites duking it out.

On the Blue side of the arena, we have...CASTLEVANIA
About: The game that kicked off the series, Castlevania is oft praised for how well it has aged, even in this age of the Castleroids. Featuring simple but nice visuals for the console, a nonexistant plot, some ****c tunes and basic but difficult gameplay, it goes down as one of the hardest games in the series. It claims the fame of introducing the almighty Simon Belmont to the world, this game is arguably responsible for the series claim to fame.
And in my opinion: Castlevania is a solid game, difficult but addictive. It features some of my favorite tunes (remix Wicked Child dammit), including the first of the three CV themes, Vampire Killer and one of my favorite characters. In all honesty, I can't think of any changes I would make to this game.
And in the Red corner, we have...Castlevania II: Simon's Quest
About: When the time came for sequels for series, developers didn't know if the market would accept games that were very similar to the first game. Thus, along came CVII, a complete departure from what CV1 was, and featuring mechanics that would not be used again until Symphony came along. Although the basic gameplay was the same (whip stuff, it dies), hearts were now used as money, you could carry around any subweapon you wished, you could purchase weapons, you were not trapped to the castle, the Day/Night feature was used only here, and bosses were now the closest thing to optional we would ever have. The game is infamous for its difficulty, with puzzles that are very hard to figure out, and hints almost always being a lie.
The game also features a basic but fairly interesting story. Simon was cursed during CV1, and he has to revive and defeat Dracula in order to save himself. He does so, defeating dracula in a famously easy battle. The final scene, showing Simon kneeling before Dracula's grave is somewhat famous in the fanbase, starting speculation of just what kind of a man Simon really is.
And in my opinion: CVII is a love/hate for me. I spend a long time trying to beat it (and I did, too), but to me, it seems like the Developers were trying too hard to make it as different as possible. Frankly, I'm not very fond of it, its not a game I would recommend, unlike CV1. That said, it does feature the second of the three CV themes, and my personal favorite, Bloody Tears, so it wins bonus points there.
