I've beat Gears of War, Call of Duty 2 & 3, GRAW, GRAW 2, Rainbow Six Vegas, and F.E.A.R.Are there any other good FPS I haven't played yet?

Try out Perfect Dark... it's a love/hate game, but you never know how you'll feel. Also Condemned: Criminal Origins (same company that made F.E.A.R.), and I'm sure there are others but I can't think of them off the top of my head.

quake 4 is definetly the most underated fps on the 360 and is actually one of the best in terms of single player

its not on 360 but if you have not played black i would try that its only 20$ now and a xbox game thats compatible, i liked quake as well

quek and far cry both sucked horribly

Hitman could be considered an FPS, although you can switch to third person with the press of a button. It's a great game, might wanna check it out.
