A few that I can think of are...King Kong,Prey,Tomb Raider,COD 3 has a few easy one's.Even though It will take some time Marvel:Ultimate Alliance has some pretty simple one's to get.

Bejewled acheivements are not very easy and they are very time consuming. I was trying to get the Level 17 acheivement today and got stuck on level 16 twice and 15 once. Easiest acheivements of all arcade games would be New Rally X. I got 65 points in my first sitting earlier today, i'm going for the rest later tonight

He's lieing, those are some of the harder ones. Easy ones go to Call of Duty 2, Oblivion, Fight Night Round 3, Cars, Peter Jackson's King Kong, and Gears of War (easy 900 gamerscore for me).
Burnout have some hard achievements...To have most of the points you have to have a perfect of every events of the game and go play online for a while too..
Tomb Raider legend is a easy game to get the 1000 pts, you dont need to collect all the stuff, its very easy and for Xbox live arcades games, dig dog is the easiest, 185 pts in 2 hours.
