I was scrolling through the achievements today and saw that there are skulls hidden in 6 different locations... i've only seen one map so far: Assembly... has anyone seen the other ones?

Its the new levels coming out in the expansion pack later on... Most likely single player

I doubt it... i know that "Assembly" is in fact a multiplayer map in the new mythic map pack... if there is a skull in that map, chances are that these other skulls are located in the mythic map pack as well... by the way, don't spread rumors so easily...Bungie never confirmed any details of an expansion pack... that ODST-game could be a game on its own... or even just an XBLA game...who knows?

It seems weird to put the skulls in multiplayer maps but you're right, Bungie hasn't confirmed anything yet. I really hope that theODST game is a stand alone project and not just an expansion.
The teaser trailer was more story oriented and skulls are only found in campaign, its most likely that they releasing an expansion seeing as how Halo 3 will be the only game with 1750 gamerscore, there must be a significant addon rather than just multiplayer maps.

For all you know they may be putting skulls in the new maps as sort of a side quest thing to do while online. It would actually be pretty hard to get them too because youd have to not get killed while searching for it.

No it wouldn't. Get a party of 8, go to Social Slayer and just happy hunting :)
