For single player, you can't do any better then The Elder Scrolls IV: Oblivion.Â
For online multiplayer, my favorites are Rainbow Six: Vegas, Chromehounds, and Gears of War.
Other great games are Crackdown, Burnout Revenge, GRAW 1 & 2, Call of Duty 2 & 3, F.E.A.R. and Just Cause. There are tons more great games for the 360, but I just listed my personal favorites. Enjoy your new system and games!

RPG: Oblivion
Racing: PGR3
Other: Kameo, Burnout, LOTR: Battle for Middle Earth 2, Dead Rising, Guitar Hero 2

Those games suck ass dont get those get GOW and dead rising or oblivion it depends on what u like get GOW for sure

go to XBL marketplace, download a few demoes and buy the two you like the best.
1) Oblivion (must-own RPG)
2) Rainbow Six Vegas (best shooter on 360... for now)
3) Dead Rising (zombies, dude)
Might also want to check out:
1) Guitar Hero 2 (because God gave rock-and-roll... to YOU)
2) Dead Or Alive 4 (brutally difficult, but fun)
3) Tony Hawk's Project 8 (next-gen Tony Hawk... y'know?)
4) Viva Pinata (seriously)
5) Gears Of War (I think it sucks, but a lot of people think it doesn't)
EDIT: Hitman Blood Money is also very good. And Oblivion is NOT better on PC. I have both... the PC version feels like an after-thought, in addition to running poorly even on top-end systems when you've got the settings cranked. I'm no console elitist -- Morrowind and Doom 3 were better on PC than on Xbox, Fear and Quake IV were far better on PC than 360 -- I'm just keepin' it real.
