Because iTunes Music is from a horrible, horrible DRM Hell, making it damn near impossible to listen to your music anywhere but from your iPod. Just burn a CD with the music on it and upload it on your Xbox, or start buying your CD's from the store like me
I'm not sure why it doesn't work (I think it might be in a format the Xbox won't play). I just burn discs of the music you downloaded and transfer them to the Xbox.

Yeah I do that too TC, just don't buy music from iTunes any more and your problem will be solved You can get a Zune too. That music works flawlessly on Xbox's
