Is there a real jump in the image quality with S-Video over standard cables on the 360? Mainly is text easier to read?

S-video is better than compsite. Component is better than S-video. HDMI is better than component.

My cable box's highest quality connection is S-Video which kind of discouraged me when I bought my HDTV. I was very unimpressed with the quality of composite on the TV so I decided to buy S-Video cables. In my opinion it is alot better and worth the extra money for the cables. The picture was brighter and clearer. I also had artifics to the right of the screen which I thought were a problem with the TV but it turned out that it was just the crappy composite video quality.
