Burnout Revenge always got my heart pumping. Playing online with a bunch of buds trying to destroy each other at ridiculous speeds never gets old, and the intensity of doing so always got me pumped up.
Chromehounds is the other game. Going into war with my squad mates and trying to execute our pre battle strategy was awesome. Especially when the strategy wasn't working and we had to adjust it on the fly. Also, seeing enemies marching down a hill towards us or flanking from the sides while our scouts were out checking the area, and we were defending our base was very intense, especially when we didn't yet have any combas towers secured (what you must secure to communicate with your team) so we couldn't talk to each other.
Those two games are by far and away my favorite online experiences ever.
gears of war back when i had a working copy got me going pretty good.
Chrome houds as well...the fields are so big you never know where your enemy is...and once your mech starts falling appart it gets really intense.
all the run and gun ones dont get me going very much...halo, resistance, farcry...very little in terms of heart racing.
The start of Bioshock, especially your arrival in rapture was fantastic.
I generally get pretty edgy when I've nabbed the intelligence in Team Fortress 2 or flag in Halo 3.
