It's "do the graphics". "Do" is a plural verb in the present tense and "graphics" are plural, as in many images shown in a series to create a moving picture.
Also, "of this" should be "these" and placed before the subject ("graphics"), the first word of the sentence is capitalized, there should be a comma between "me" and "or" and the video game you use in the comparison, Max Payne, possesses it's own graphical qualities, so it should read "Max Payne's" to reflect ownership.
"Is it just me, or do these graphics look like Max Payne's?"
