Just use the character that you want to get skill points for and they'll level up. Stick with the character that you want the skills for and it won't take long to level them.
I used to play completley ridiculous ammounts of Soul Calibur IV. I'm currently up to 450+ hours in that game and a good chunk of that is from the first month or two that I had it. Never again lol.
More recently I'd say Resident Evil 5. Finished the story and then just shuffled between co-op,mercs,and versus. The game is just pure fun and I love going for better scores/times. Aaaand then there's my all time favorite that I'll never stop playing:Team Fortress 2 :)
Mass Effect. Not that I didn't like it because it seems to be a good game,but I died a lot early on and the game tends to set you back pretty far if you forgot to save and I just got sick of it. After I learned to save often and actually made a little progress I ended up getting stuck on a boss and haven't picked it up since.
Another one would be Oblivion,mostly the main quests. After two years and four characters I've just made it to the fourth quest in the main storyline for the first time and I'm pretty sure I'm going to stick with it now.
Another vote for Condemned. They nailed the atmosphere perfectly,the enemies are crazy as ****,and the story is messed up in the best way. The only problem is that once I realized that the main character is voiced by the guy that plays Matt Parkman on Heroes I had to chuckle everytime I heard him talk.
