You CHOOSE what map/game type you want, and you can even customize game options. The only thing that sucks is that most of the community has moved on to the CoD games. At this point in time I'd pass over the original R6: Vegas and go straight for the second one, if you're looking for online fun. If you also enjoy single player then get the first R6: Vegas as well, because the story is better in it :)

I actually own R6V2 but only bought it because my friends said they were going to....bastards didn't and left me alone with it. I beat campaign and haven't touched it much yet.
As mentioned in my OP I hate games where I die in seemingly two shots... are there any game modes that let me instantly respawn?
Dying in two shots from a pistol from half way across the map and then waiting 5 min to play again is pretty boring IMO.
Unreal Tournament 3 lets you instantly respawn after you die.
