Some of those games such as Windwaker ALREADY had a second chance since they were remastered older games.

This is making me think of Beyond Good and Evil.

There was still things that mods couldn't fix which needed to be already hardcoded into the game and can't simply be modded back in.

Well I was referring more to the PC versions, the modern console ports seem to be an after thought though.

TES games were supposed to be fantasy, they aren't supposed to be realistic but the later games like Skyrim tried to be and it pretty much ruined them, many RPG features from the previous games were stripped away and it had limited colour of mostly grey, brown, and white.
