The only golf game I know of other than Tiger Wood PGA Tour is John Dalys ProStroke Golf. Everything else is an Xbox Live arcade game. Hope this helps!

The processor and RAM are both more the enough to run the lastest games on ultra settings. The GPU hower, is definitely the bottleneck in the machine. It can handle game like MW2 at medium to high settings at ~ 30 FPS but games like Crysis are best played on the lower settings. I found this chart for the 425M and it tells you pretty much everything you could ever want to know about it including game framerates at different graphics settings. I hope this helps!

Also, it will most likely be able to play Battlefield 3 on medium to low settings without a problem.

How old is the Xbox? You may want to open it up and clean any dust out of it.

That's a tough call... I hooked a Hauppauge up to my wifes laptop that had a dual core pentium @ 2.0Ghz with 2GB of ram and the videos came out really choppy. I'm not sure if it was a hardware or software issue but the videos look fantastic on my desktop. You could always give it a shot and then just return it if your computer can't handle it.

The only 2 that I know of right now are the: http://www.newegg.com/Product/Product.aspx?Item=N82E16815100049 and http://www.amazon.com/Blackmagic-Design-Intensity-Pro-Editing/dp/B001CN9GEA Both require a very powerful PC and recommend that you use a raid setup. On top of that, to eliminate a 5-10 second lag between the console and the computer, you need to use a powered HDMI splitter. At this point, the Hauppauge is definitely the best option out there, but like you said it doesn't support HDMI. Hopefully someone will come out with a solution very soon. I hope this helps!

I work at a surgery center where a lot of the doctor use Dragon Naturally Speaking Medical to dictate their chart notes. I work in the IT department and the software is awesome! Definitely worth the money!

A major downside to crossfire or sli is that not all games support it, and some of the ones that do, do it poorly...

This includes new games, and games yet to be released...

What new games/games yet to be released, can take full advantage of a 5850 but don't support crossfire? Modern Warfare 2 and Black Ops are examples of games that don't do a great job of utilizing Crossfire but even then, 2 5850's would dominate any single GPU on the market in either game. If you have 2 available PCI-e slots and a capable power supply, Crossfire can't be beat.

Adding a 2nd 5850 is going to give you better performance than any single ATI or Nvidia card on the market (With the exception of the 5970, 6990 and the GTX 590) in most games, so for $145 I definitely think that, that would be the way to go. Depending on the game you will experience anywhere from a 40% to 99% increase in performance. I personally am running 2 6850's in crossfire right now and I would imagine that 2 5850's would be very similar. You'll hear a lot of people complaining about ATI driver issues but honestly I haven't had any problems at all with either my 6850's or the 2 5770's that they replaced. One important thing to know is that some games that don't support dual GPU's (Like WoW) will actually see a drop in framerate VS a single card so you'd want to disable Crossfire in that scenario. All-in-all I have been extremely happy with my crossfire rigs over the past 3 years and I don't see myself ever going back to a single expensive card again. As for the dual monitors, you plug them both into whichever card is considered primary. The wireless controllers work with a PC, but you need to buy a wireless USB adapter in order for it to communicate with the computer.
