I enjoyed Halo and Gears and KZ. I thought Residence was horrible. So by default I would have to choose Halo and Gears
Both FM3 and GT5 look great. T10 has done a great job with the grafx and Poly has done a great job in updating their gameplay to current standards..
I would choose the PS3. I find the games and quality of the hardware more impressive than the 360's.(nothing to do with RROD.. E74). Build quality, finish, etc.
