Games are judged by things like graphic fidelity and adequate AI, those aren't opinions

For that to be true, one's review shouldn't in anyway reflect the reviewer's feelings about those details, which is not always the case.

There's a difference between say "The framerate isn't constant" and "The framerate sometimes drops to painful levels".

As soon as you associate your feeling with you observation, it becomes an opinion.
