Mostly because they came out simultaneously. They didn't complete the Wii U version, then port it over to the Switch. Both have been in development side by side for at least the last couple years. I'm not saying it's wrong to think of it as a port, I just don't see it that way.
The big N delayed the BotW Wii U version to help the Switch, much like they did with Twilight Princess on GC to Wii, except with that they actually delayed the previous GC Twilight Princess version (3 weeks released AFTER the Wii Version) to help sell Wii's in 2006. Luckily the GC did have Celda:WW as an exclusive prior to TP.
I had TP on Gamecube Reserved for nearly 3 years and remember that time frame well.
When launching a new console, it's critical (or at least beneficial) to have a killer app to move units, much like Mario64 did for the N64, which only launched with two games.
Remember, the Wii U never actually got it's own original exclusive Zelda (a peculiarity in studying Nintendo's history with their consoles) as BotW was going to be a Wii U exclusive, until Wii U sales numbers forced Nintendo's hand, and they then delayed the Wii U version and began crafting the Switch port.
