Depends on what length career you chose. None of the XP requirements have a determined setting. If you went for a full 7, then the XP requirements are pretty high. If you went for 2 or 5 years, then top teams become available sooner. Or you could just select somebody from Mercedes as your championship rival (that happens around Germany, I think), beat them, and they will offer you a contract. (But I doubt that will happen if you're already driving for RBR). Good news is McLaren and Ferrari are the only really time-consuming ones to get through on XP alone.
As for who you replace, it's who ever on the team that has fewer championship points when the contract is offered. Let's say you get a contract offer from Merc GP and Schuey is higher in the points standings. In that case, you would replace Rosberg, with MSC as your teammate. (However, at McLaren it seems you can only get Hamilton. Bias much, CM?)

I am doing a 7 year career.
Currently I'm 1st on the driver's and constructor's
Schumacher is joint second on driver's with Alonso
Hamilton is 3rd and pretty far off them
Rosberg is 4th.
On the 10th race of 19th (silverstone)
Will I be able to drive for Mercedes or is it just not gunna happen?
