If including PC, the only game on the horizon I can see beating Crysis is Far Cry 2, PC version. It probably won't be as realistic, but if you watch the videos and such, it's obviously not trying to be. It will be a little more advanced than Crysis, though, in terms of destructability, physics, effects, etc. (remember, pure realism does not equal best graphics)
If talking consoles, I would say even though we haven't seen anything on either of them, FFXIII/Versus XIII and God of War 3 are much more likely to end up as "console graphics king" at the end of '09, if they come out, than GeoW2 or KZ2. For FFXIII/VSXIII, I base this on previous installments in the series. FFVII, VIII, X and XII were all at the top of the ladder in console graphics upon release, and the FF series has always been at the top in terms of production values, so I see no reason to doubt XIII (purely in terms of graphics). God of War 3 will probably be Sony's biggest 1st party exclusive they have ever released, so you can bet on them putting everything they have into it. Of course, this is all speculation, since we've seen a little of GeoW2's gameplay, and a decent amount of a level in KZ2's gameplay (I still haven't seen a game with better animations. Crysis doesn't come close in that department), while we haven't seen anything on GoW3 and almost purely FMVs of FFXIII/VSXIII. I'm sure Fable 2 will be pretty, but I don't see it coming close to the other games mentioned. Maybe when/if it comes to the PC.
