There is a MASSIVE difference in HDMI cables. Lets start with this, there are two types of interference that can affect your cables. First is Magnetic interference, this is cause by the proximity of the cable to wall outlets, and other power sources, especially powerbars that your PS3 is likely plugged into. Magnetic interference is reduced by insulating the cable with copper weave. If the cable feels really flexible, and bends easy, and is light, thats an indication that theres not much copper weave in it. This is the most important part of the insulation.
The second for of interference is radio interference. This is from the 50,000 watt radio tower down the street. (Pick your poison really, can come from anywhere) Radio interference is reduced by aluminum foil wrapped on the cable. This is the lesser of the two evils, depending on your proximity to said radio tower or whatever it is. However, radio interference is often more visible as it affects the video portion of the data.
So, there is clearly a difference between cheap and expensive cables.
Heres a link for a VERY expensive cable. http://www.memoryexpress.com/Products/PID-MX10421%28ME%29.aspx
Here is a link for a less expensive version that still has a decent amount of shielding.

Both are good, but one is better. Its largely related to the quality of your system too. If you plug a $150 cable into a "HDTV" from walmart, thats a waste. If you plug a $150 cable into a brand new Panasonic 58" 1080p plasma... you'll get the best graphics you can possibly get from your playstation. TY
Edit: it basically comes down to what your plugging it into. If your TV costs over $3000... PLEASE, PLEASE get good cables, without them, you ARE missing out, trust me. If your rocking a $650 viewsonic, go ahead and buy those $5 cables.. Also, dont forget that if you have a nice system hooked up to the TV, the plugins go PS3->Speaker System->TV. This is because most new stereo systems have HDMI passthrough, which means the video signal doesnt get distorted at all. TV->Stereo means that theres no passthrough, and your audio can be distorted.
