Perhaps The Night King chose not to attack Jon Snow and company on the ice was because waiting them out was the better and safer option to maintain his forces - afterall we can assume he will be invading when the weather changes.

It was already common knowledge that Season 7 would be 7 episodes and Season 8 would be 6 episodes
