ps3 version is brighter. Xbox 360 version looks to have smoother texture. you can't really see the texture difference untill you play the HD comparison. it's very minute. though i'm not sure about the standard tv setting and component cable vs. hdmi or vga, it depends on tv, there's a certain unknown to what the difference between certain HD tv sets. but right now i say the ps3 looks prettier despite the brighter image quality.
the real question is how much money is enough to keep FF 13 exclusive to sony. If microsoft is invited to table of discussion to square along with sony then we might see something interesting.

My guess is FF 13 will stay exclusive for awhile then it will be ported to the 360 when it's available for the u.s and european release. although we might see a possibility that sony outbids ms... we have to wait.
