If you want player 2 only then turn the first one off or change it to controller 3 or 4 and then just ignore it and player 1 should disappear

You have to press start on the 2nd controller if you want to jump in with a another dude.

And for the thermometer you have to use as few different materials as possible. The size of the thing has no effect on the thermometer. Theres a good breakdown on the thermometer system on youtube, The video is called something like "How to keep your thermometer level low" or something.
