Maybe you have to unlock them after finishing the game in hard mode or something.... :)
I mean ( Play the game in easy/normal mode, to unlock hard mode. after finishing the hard mode, you will unlock Xtreme mode "like MGS2". and Xtreme mode you will be able to see the cut scenes... who know ? )
