Because we're eventually told/discover that it's not true. Also it's easier to contain the stories in the Bible as being true, because they already happened a long time ago, no matter how silly they might sound, while Santa Claus is built up as a person who exists today and sneaks into your house at night. Obviously that may be a bit easier to dispel, don't you think?
That still doesnt disprove my point.We don't believe in Santa when we're old, because our parents tell us (or we uncover) at a younger age, that it was our parents themselves who were placing the gifts under the tree, even though we were always brought up to believe it was Santa Claus. Hell, if it weren't for that part (the home invasion aspect), I'm sure people (adults) would still believe that there could be a man in the North Pole named Santa Claus (except that he wouldn't be putting gifts under your tree).
It might sound extreme or silly that one would still believe that, but religion proves people can still belive in anything these days.
