My team cooked this last night in a regional "Iron Chef" type competition. Our secret ingredent was beef, we had to use an Angus top-sirloin and blade roast in each dish. This was one of our dishes, it's both cuts braised with carrots and sugar snaps over a rutabaga, potato, and goat cheese puree topped with bacon. I wasn't happy at all with the way it looked, but we won!

This is the only thing that came to mind, animal fries. Onions, bacon bits, cheese and whatnot on their signature sauce. Its delicous.

Yup. They put milk in a bag and put a whole bunch of those inside a even bigger bag.
In Portugal you can also buy bagged milk, very odd indeed.

That's dragonfruit right? I remember trying some dragonfruit one day and was disappointed. It doesn't taste like anything! I was expecting it to be the greatest tasting fruit in the world but it doesn't even have a taste. :(

Thanks. It was good, but I just think (compared to the other dishes) the plating was a bit sloppy and the dish itself was a bit amateurish. I was surprised by how challenging having to use 2 quite different cuts of meat in all dishes was, but it was really fun. The limited pantry was a pain to work with too. No milk? No bell peppers? No pineapple? Really?
The semi-finals are in 2 weeks, I'm excited! Here's some more of what we cooked, much prettier in my opinion.
Wood grilled top sirloin with bearnaise and flat iron steak on oyster mushroom rissoto with a cabernet cherry sauce and sauteed asparagus.
Alderwood roast sirloin and panko wasabi breaded flat iron cutlet on pecan and cranberry polenta with shrimp jus. (Really just a fancied up surf and turf/shrimp and grits.)
Where did you/are you attending culinary courses? Those dishes look AMAZING.
Thank you very much. We worked hard, but I was honestly surprised that we won. I was sure that one dish blew it for us.I never went to culinary school. My mom introduced me to cooking, then started working in kitchens washing dishes and took any opportunity to jump behind the line or get a knife in my hand. In the military and during college I was around (mostly) young single guys who had never been away from home and cooking for friends gave me plenty of opportunity to practice, the ladies like it when you do the same for them. My current 9-5 is as a paralegal, but my boss owns a restaurant at which I cook on nights and weekends.

Nice. Those look like professionally done cuisine to me, though I'm no expert.Still, they made my mouth water.
I'm looking to get in the culinary course where I live (I'm on Maui, and apparently it has one of the best culinary programs in the nation which I find really surprising) and am really looking forward to starting it. My mom's a great cook and she's taught me a bit here and there, and I know a few dishes. But what I'd really like to learn are things like knife skills (you should see me try to chop an onion :o), how to properly cook different ways, etc. The basics.
It sounds like you have a great set-up there though, I'd love to have access to a professional kitchen. I mostly want to cook not only because I love food, but it'll also be of practical use at home, not just as a trade. Plus as you said the ladies love it....always a bonus. I wish there were a food union around here, It'd be nice to have a place to share recipes and talk about food.

Why don't most people (especially Americans) know what a poutine is? It still amazes me....especially since its really popular in Canada. I'm not sure, but it wouldn't matter. Fast food places serve garbage poutine.
