A few bands that I think that you would find interesting are...
Katatonia - This band started outwith a very heavy sound, which was a unique Death/Doom kind of thing. Katatonia's sound has morphed into an equally unique blend of Hard Rock/Metal with strong Alternative elements. Katatonia (and Metal) purists scoff at the change in the band's sound, but I find their evolution to be a testament to their innovation. Plus, I still hear the Metal in their newer songs, and Katatonia still do quite a number of their oldschool songs when they play live, and they do them well. :)
Daylight Dies - This band hails from Raleigh, North Carolina - U.S.A., and they play a potent mix of Melodic Death Metal and Doom Metal. Their sound is very European, and their music manages to combine very somber elements with some understated power. The strength of their sound comes from their talent, ability, and focus on songwriting. The lead guitar player for Daylight Dies (Barre Gambling) is a genius.
Opeth - Yes, this band is always mentioned by tons of people in "Reccomend Me Some Good Metal" threads in forums, but there is a good reason for that. Opeth is an excellent and unique band that has a great catalog of albums and some truly epic songs. If you are turned off by their sound, make sure to check out an album by them called "Damnation" - this is an album that differs greatly from all of their other albums. Damnation is quite mellow and understated, and carries a unique, spooky weight all it's own through oldschool songwriting and performance.
