Women talk much more than men, either about "nothing" (i.e. trivia) or feelings. Partly this is a way to establish an emotional connection. Partly it's because women are better at verbal communication than men, so they do it more naturally. Partly it's just because women gain more pleasure on a psychological level from the act of conversation. (That isn't sexist, there has been a lot of research into it. Gay men also tend to enjoy conversation more, and be better at it - which is why many women enjoy the platonic friendship of gay men.)
So, if as a male, you tend not to be so emotively verbose - perhaps you see conversation as a way of conveying information, not establishing emotional connection - then it's a natural female reaction to try to get you to open up through conversation.
Having said that, I also recall relationships where I've often said "what are you thinking" - and in those cases it was where I felt unsure about the relationship because I didn't think we were connecting. I'm sure that kind of response could come from anyone (either gender, any orientation) as a way to try to make sure that there's a connection there.
there are two answers to that question:
1. You dont want to know
2. If she continues, just say "what do guys supposedly think about every 7 seconds?"
Last time I was with a girl that asked me that, she asked me 3 times... third time I answered "I'm thinking you're trying to know every single little detail about me, that way you can eventually find me boring and move on to another one."

It's a trap. She's just played out your entire life together including grandkids and you're retirement in Colorado. If you haven't had the same scenario playing in your mind, you obviously aren't serious about your relationship and she will take the time to let you know just how much she disapproves.

I think most of us figured that... it's just that most of the time, when a girl asks you what you're thinking about, it's in one of those moments where you're just looking at the wall/ceiling mindlessly, so you don't even know what you're thinking about yourself... IF you are thinking, that is.

Becuase so many of them are subconciously taught to value themselves based on your opinion of them. So basically when that question comes up complement them in any way you think they would like to hear and that is exactly what they are really looking for anyway.
They dont REALLY want to know what you are thinking if it doesnt help them with their view of themselves
