when your actually playing a game, theres not going to be that much difference EVER, there will always be a slight delay do to dinstance, every shooter i've ever played you have to have a slight lead on a moving target, but xbox live has a lot more under the hood. i've never used a wii so i'll just compare my experience with psn. All voice chat is built in through live, cross game, same game, out of game, all of it, part of live, so theres a consistent quality through games vs psn where people sound robotic in cod and in other games they sound fine. Matchmaking is also built in, so with truelive skill dev's have the option to just have a ranked list at there fingertips without using much code to add it, connections are better on 360, when i say connections i don't mean while connected just the act of connecting, people drop its easier to switch hosts, or just get connected, i've hit points with my ps3 when i had a lot of traffic on my network or i was at school, the ability to get into a game dropped significanlty where my 360 really came through shining, not that it was perfect, but the 8/10 attempts at joining a game were successfull, where on my ps3, 2/10 were successfull. I'd say 360's netcode is probably the most efficient with dedicated servers for chat and matchmaking, make it worth the extra fee, its not very noticable in game though...
