Crysis.

Bioshock has some lame water effects: the toilet and the sink are made of fail.

Stalker: Clear Sky has some awesome wet surfaces: http://www.shacknews.com/onearticle.x/5232

Crysis on very high, or uncharted, Red Alert 3 water looks rather nice even if its not realistic.

Gears of War.

I had to pause the game just to rush over here and tell you guys.

I just reached the level when your "junky" vehicle breaks down at night and it's flooding water and rain. The amount of detail is absolutely spectacular - and that's coming from a PS3 owner. You can actually see the the plants "tilting" when the drops hit them. Any structure above ground drips like in real time it's absolutely beautiful. The river beneath looks like...well, like a REAL flowing river and not just some amature transparent liquid-wannabe.

One small catch though :)

This is running at 1280x1024 with everything turned on on my new pc beast.

Since I'm running the game at over 100 fps, it's not likely to look the same on the 360 I presume...

1xcalibur1

The first ever realistic water effect belongs to Wave Race 64 by Nintendo. The game released over 10 years ago and it still holds on its own right now.

The main course was water... Hopefully it did well in that.
