Warning - May be Major Spoilers Ahead
Metal Gear Solid Bosses
Gray Fox (MGS) - I loved this boss battle. I love that first moment where my first reaction was to take out my gun and fire non-stop at him only to have all my bullets blocked with ease by his sword.
Psycho Mantis(MGS) - Ingenious. Just plain ingenious
Torture Chamber(MGS) - While this isn't a formal boss battle, I consider this a mini-game mini-boss battle because it was so hard to pull of the first time around to get the Meryl ending.
Metal Gear Rays(MGS2) - A single Metal Gear Ray is simple to take down. However, when you are playing this boss battle on extreme mode where you have to take down 25 of them(If I remember correctly) and it takes much less to kill you, this quickly becomes a battle of narrow misses, heightened reaction times and careful timing and precision.
The End(MGS3) - My god. This was such a great battle. Never have I felt like such a true sniper before in my life.
The Boss(MGS3) - Nothing beats the expression on your face that first time you point your gun at the Boss and she comes running up to you, dismantles the gun into pieces, breaks your arm and throws you to the ground. But beyond that, this was an absolutely beautiful boss battle that could only be defined as perfect.
Devil May Cry Bosses
Cerberus(DMC3) - This was my first boss battle with the more bigger baddies in the Devil May Cry universe and boy did I enjoy it
The Brothers United (DMC3) - I loved the tag team between Dante and Vergil in this boss battle against Jester.
Final Boss Battle Vergil (DMC3) - Every time he transformed, I held my breath.
Mundus (DMC) - The progression of this battle was pretty good
I'd say some from DMC4 but I can't remember any of their names
RPG Bosses
Squall Fighting off the Galbadian Soldier while hanging off a jet pack (FF VIII) - This is another one that's more of mini-game mini-boss battle but was still really impressive, especially since you could see the war raging on between the two gardens while you were fighting off the Galbadian Soldier.
Diablos, Cactuar and Odin GF Battles (FF VIII) - I was really impressed by these battles, especially with how the Odin GF battle worked. I was so screwed the fisrt time I went after him since I reached him with 1 minute left
Adel with Rinoa as a hostage (FF VIII) - This battle was pretty impressive in how you had to kill Adel but keep Rinoa alive by healing her every now and then.
Fully Grown Leviathan (Odin Sphere) - I really felt this battle was impressive, the way you were running on the Leviathan's body , dodging attacks to get to his one vulnerable point)
All parts of the Final Boss Battle with Xenahort (Kingdom Hearts 2) - I loved the reaction commands in this boss battle from beginning to end, especially the one when he has the red lasers surround you and collapse on you like Piccoro's Scatter Shot and you have to press the triangle button repeatedly to block them.
Sephiroth (Kingdom Hearts and Kingdom Hearts 2) - ...I hate you and your heartless angel and "that's enough" combo! lol
Boss Battle at Beast's Castle the first time around (Kingdom Hearts 2) - I loved the reaction command for when you are knocked towards a column
Xaldin (Kingdom Hearts 2) - I really loved this boss battle.
