It's been a while since I beat it, but I remember not being happy with the time I spent. It felt like they didn't know if they wanted arcadey or a sim; and they landed somewhere in the middle.. which I didn't care for.
Like many have said, many of the missions were boring, or would end because you thought of a better approach than what they designed. The story was decent, the acting was good, the details were great, but the fun was absent.
Half the systems were completely superfluous. I upgraded the base constantly, and was barely rewarded with a few bullets (which I found constantly), and some food (that I found constantly). And if I didn't find enough of those, I found or earned tons of money, so I just bought it. I also hated buying stuff from the brochure. Maybe that's authentic, but it felt too easy. Either I need to wait days to receive my goods, or have specialty items to only be obtainable from certain locations in the world. And that should require an effort to reach. If I want the higher quality, more accurate rifle rounds, make me ride a long ways, or take a lengthy train ride to get there... if immersion is the goal. On the train, you could spend time cleaning your weapons, to gain an accuracy bonus. Or you could gain more information about missions and locations of interest. Or spend that time drinking and gambling. And WTF happened to liars dice?
On top of that, riding the horse didn't feel good. It was probably more realistic than the last game, but it wasn't as enjoyable. I loved just strolling the desert under a canopy of stars in the first game. I dreaded using the horse in this one. But I did keep the same horse all game; so the end got me.
Hunting and gathering was pointless as well. You could spend hours with that nonsense, crafting something that at best, barely benefits you at all. But good Lord did they add enough useless costumes, so you can play dress up till the cows come home.
To me, this didn't feel anything like a spaghetti western. RDR1 did, but this felt a lot more like Cold Mountain or Deadwood. Maybe with the humor of Django sprinkled in. I know not all cowboys lived in aired desert landscapes, but that's what I loved about RDR1, and I wanted more. This spent way too much time in the mountains and the swamps for my tastes. It started to get there at the very end... and then it ends. It also takes place at the end of the wild west? That's half the reason I'm playing this f*cking game!... to escape our lame ass world, and experience that one... from the cushy safety of this one! It's a scramble.
It's definitely a technical showpiece... but I did not have fun.
