Gears 1 and 2, Halo 3, Mass Effect, RE5, and Bioshock all stand out to me in terms of technical and artistic standpoints.

Edit: Forgot Tales of Vesperia, Mirror's Edgeand Prince of Persia.

Ok if you haven't watched Uncharted: Among Theives watch it the second you read this that game looks amazing and its colorful and this game so far is the best looking game i've ever seen, which means 360 needs to up the game, and the next best looking game is Metal Gear Solid 4 which is also PS3 exclusive which is the best looking game out right now,but when Uncharted comes out it will be probably for the next 2 years.
