Perfect Dark Zero. I am a big fan of the series, and I still love that game. Say what you will about the art style, the textures were really amazing back then.
Also... Madden NFL 08. I guess I was too used to the previous generation. The first time I played madden on the 360, I could almost convince myself I was really at the stadium. No doubt there are games far better now, but this is about what wowed you at the time.
Are you guys kidding naming Forza 2? I mean, really? Gotta be a joke.
I LOVED the game andplayed over 200 hours online alone. But for everything it did great, it was *quite* lack-luster in terms of graphics. PGR3 looked soooo much better.
Red Dead Redemption. Bright & clear mornings, slightly overcast afternoons, gloomy evenings, & totally stormy night times, for me,this game has run the total gamut of graphics & effects, atmosphere & mood. This is the game that has "Wowed" me.
Lost Odyssey great all round looking game was first impressed by the game/xbox 360 seeing the trailer before release that showed the beginning sequence and there was a barely noticeable and instantaneous transition from cutscene to gameplay with little change graphics wise, thoroughly impressed.
