I dont necessarily want destructive walls (like Battlefield: Bad Company) but it would be cool if the bullets actually went through the wall, leaving a visible hole to look through.

I would say Oblivion. Dont get me wrong, it takes a while, but the game is so much fun and the achievements arent really challenging, just time consuming. Which is a good thing for such a great game.
