I'd say still shoot for Shadow of the Colossus, and I didn't check your list, however, if you haven't played Okami, slap yourself silly, go rent it, beat it, then slap yourself silly once more for good measure.

Almost every boss in Final Fantasy XII4licNah, most of them weren't that bad so long as you had a good grip of a Quickening system.As for tricky bosses, try any, even the minor ones, from Odin Sphere. Normal difficulty can be insanely frustrating.
Man, get Valkyrie Profile: Lenneth. It's got a storyline that bests most console and PC games and it's battle system is awesome as well.
