The gameplay in Gears of War is pretty solid, very fun to play with a friend (Online and Off), and they completely nailed the cover system. The graphics is some of the best (so far) from this generation.

If it's 360... properly: Elder Scrolls IV: Oblivion

but if everything goes: Metal Gear Solid (1, 2 or 3).

The soundtrack of Final Fantasy VII comes to mind...

but also Harry Gregson-Williams music for the Metal Gear Solid games stands out. It's so epic.
