When
you do set it up, make sure you go through the audio setup in the PS3
settings to make sure it's using HDMI for audio. I hate how the PS3
seems to do only one at a time. So I set it up to use optical audio out
for my surround system, but then that disables audio through HDMI,
which is annoying when I just want to use my tv speakers now and then.

With
this port that says HDMI/DVI, the video port is a thin port, similar to
a USB, right? Or is it a DVI port, like a PC monitor connection with a
bunch of pin holes? I assume you've seen the cable in the links I gave.
If it is a HDMI port, then the mentioning of DVI might just hint to the
fact you can convert DVI cables to HDMI to use on your tv. I assume
that's why the red and white audio cables are there just incase you do
use DVI to HDMI since you would need them because DVI does not have
audio, while HDMI does.
So you should be okay with just HDMI
for both audio and video, but you can always use, not 100% sure, the
red and white cables with the PS3 Composite cable at the same time
incase for some reason your tv does not take audio from HDMI.

The original cable that comes with the
PS3 is Composite. It's easy to confuse it with Component. But no, you
don't need it plugged in, but depends. You can just plug in the HDMI
cable and that will send both audio and video to your tv. Or you can
use an optical audio cable too if you want to sent 5.1 surround digital
audio to your sound system. Also, I think it's possible, if you need to
for some reason, to connect the composite multimedia cable and use only
the red and white audio cables while using HDMI.
