They werent showing parts of the game but were only demonstrating mechanics. Thats why the demo just starts randomly and is secluded to a few arena's.
You probably dont remember but sort of like what we saw of Heavenly Sword at E3 2006 which lead everyone to believe it was an arena game where you fight waves and waves of dudes. Completely wrong. Of course no-one thinks that hopefully. Im just saying, lets atleast wait for an official trailer showing off the actual game. The one we got at E3 was pretty much a gameplay montage of the tech demo

It's not that we are jumping the gun, I agree with everything you say, it's just overall, the feeling is gone man. Thats the problem with showing of game mechanics first, its usually not very exciting. I feel that all Nintendo have shown us is the sword play (and a few other items) and from what i can gather, its really awesome. I dont think they were trying to give us an indication of the games atmosphere and feeling.
But i understand what you mean and if i thought Nintendo were used the E3 demo as a tool to show the actual game, then i'd be agreeing with you.
EDIT: Oh man, i just watched the first clip through. The forest temple music is still at the top of videogame music. And it still creeps me the hell out.
