Intel Core i5 2500K - The only different between 2600K and 2500K is the amount of threads per core. Essentially, the 2600k can handle more tasks at once, but the processing power is the same.
4-8 GB - any more than 8GB is a complete waste and can actually slow your system down
Hyper 212+ CPU Cooler - Don't go cheap on liquid cooling. If you're going to use a closed loop system, I'd recommend the H100 ($120) otherwise stick to air coolers.
HD6970 or GTX 570 - If you're going to go highend you either get one of these, and if you want more power, you put them in SLI/Crossfire.
The GTX 580 scales horribly in SLI and the 590 is inferior and costs more than the HD6990.
