It depends if your running Vista the 1950 is a no brainer. In XP i would go for the 7900. The Nvdia drivers for Vista have problems but ATI has very good Vista drivers. In XP the Nvdia drivers are better. The speed between the two is negligable. In any other os graphics don't matter much anyway because of a lack of High End Games.
The new mac book pro has descent graphics and should run most new games. You will have to install XP on it though, If I recall right Boot Camp is a program for dual booting a new Mac with XP. Since the new macs are intel machines this is not a problem and doesn't give you the slow downs of emulation.(it runs windows native)
You could buy a Dell with the same specs for less money and not have to Pay for a copy of Xp and the headach of installing a dual boot system. The software you want is Just not available for OSX.
