Because as a guitarist, there are people far superior. As a composer, there are people far superior. As for his influence, once again there are people far superior. And I can think of people who defeat him in all 3 categories:

There isn't a guitarist out the more influential than Jimmy, end of story. He is the biggest inspiration for guitarists across the board genre wise.
You should learn a bit before you talk. The instrument of Guitar was mainly used by peasants and poor people. However the piano and violin were sophisticated instruments used in concert halls. The guitar wasn't looked at in the same light. Long before electric guitar was out, the two guitarists I named played the biggest role in bringing the guitar to concert halls, and being played among orchestras. Without them, guitar would have still been a poor musicians instrument.
Without this sophistication Segovia, Barrios, Tarrega, Rodrigo and others brought, who know how other forms of guitar would be looked at when they were developed. This was before Blues, Rock'n Roll and Rock music were around.
They were heavily influencal in guitar.

I'm sorry you haven't heard of them. Unfortunately western mainstream popularity has taken away the complexity and compositional value music once was. Perhaps you should listen to these superior artists I have named. What they have played on guitar strings is beyond the comprehension of guitarists like Jimi Hendrix and Jimmy Page.
