Metroid Prime won me over in a single graphical moment. Landing on Tallon IV for the first time, looking up to the sky and seeing the raindrops falling down on Samus visor sent chills down my spine. That's also when Metroid Prime won me over after doubting it for so long.
Mirror's Edge is probably the only game that has made my jaw drop in terms of how otherwordly good it looks. Compare shots of Mirror's Edge to almost anything else released this generation and the colour difference is night and day.
And of course I will never forget the distinct graphical style of Donkey Kong Country 2 the beehive, theme park and lava levels simply blew my mind as a kid. And they STILL look amazing.

While I prefer Prime's environments to Prime 2 (as a whole, since 2 is so depressing all the time), Prime 2 did look a bit better and there were areas that were so well done it made you stop and stare. Especially the cyber place.
Perfect Dark 64 would easily be the winner on 64 if it wasnt for its awful framereate in co-op and some multi. The game was ahead of its time in almost every sense.
