I might as well get this thread started.
My favorite Castlevania game is definitley Castlevania IV, with SOTN as a close second.
My favorite character would have to be Alucard, because he simply looks awesome and has that "I must kill my father" attitude which is deep and shows his bravery/dedication. Cornell is a close second, he just hasn't had enough attention IMO. I'd like to see him in some more games. The only thing that's preventing me from choosing Simon is his unwillingness to wear pants. I mean seriously. Fine in the 80's, but now it's starting to look ridiculous.
Least favorite Castlevania game would have to be Castlevania 64. It wasn't terrible, but dissapointing enough to stand out in what is otherwise a fantastic series. The controls and camera were pretty bad, and it just felt bland. At least Legacy of Darkness was a little better.
Also, one more thing I have to note. Anyone find it weird that different Castlevania titles seem to recycle their names? For example:
- Legacy of Darkness, Curse of Darkness
- Aria of Sorrow, Dawn of Sorrow
- Harmony of Dissonance, Harmony of Despair
- Order of Ecclesia, Order of Shadows
- Bloodlines, Rondo of Blood, Bloodletting
I know there are a ton of games in the series and eventually they run out of name ideas, but at this point it's just getting confusing!

I changed my mind. Curse of Darkness is the worst in the series in my opinion. The game's levels felt really bland and the combat was way too simplistic.The_Breadcrab
Darn, I though my thread would be a little more popular than this. Oh well, I can carry it for now.
Here's an interesting castlevania pumpkin carving:

Also, a cool techno version of the song Vampire Killer:
