You can always look at multiplat sales. And even then both the PS3 and 360 beat the pc time and time again. You dont even have to combine them to do it. The PC version of a multiplat in MOST cases is always in third place.

The PS3 is actually usually in 3rd place, and on some games the PC does better than BOTH consoles combined (see portal 2, BAd Comapny 2).
According to Bethesda Skyrim sold 5 million copies at retail among PC PS3 and Xbox. Based on estimates from Steam, the PC sold about 2.5+ million copies. So even if 80% of retail was consoles, odds are the PC sold better than the Ps3 version, and close tothe xbox 360 version.
And since about 1/2 of the copies were digital only those 50% brought Bethesda about 30% more profit than a console retail sale. In terms of [rofit, I wage the PC either beat the xbox or came close.
Look at Diablo 3. The game sold more than the vast majority fo console exclusives. 6.5 million in the first week alone.

Because they loose far more from piracy than what they could gain from a console only title
It's cheaper to develop PC games, so they don't exactly have to sell as much to make the same amount of earning as their console counterparts.Thats only for Exclusive games, multiplats still have to sell well on the PC
