The lack of Paper Mario is surprising, for me, it has stood perfectly and still looks great to this day thanks to the awesome arty 'paper' graphics.
In order:
1) Paper Mario: for reasons stated above
2) Killer Instinct Gold: love it, has aged great
3) Lylat Wars/SF64 : I could play through it all today and still think it looks awesome
4) The Legend of Zelda: MM: Ocarina of Time may be my favourite game (pretty much other) but this brother of that classic is every bit as good, AND, i would say has aged much better (graphics wise), a great looking game with style.
5) Banjo Tooie: Still looks and plays great
honorable mentions: Super Mario 64: may well be better then some/all of the games up there, and it HAS aged great, but not as well in my eyes, comparing it to its liitle brother (Paper Mario) it hasnt aged half as well. Obviously Goldeneye/Perfect Dark: None of the games up there are anywhere near as blocky, while both of these are obviously amazing games.

Game's that were really impressive when n64 launched was waverace or starwars.
i agree though i havent been impressed by any games since n64 basically, i guess it maybe was move from 2d to 3d, but waverace was just so beautiful nice water animations/waves kicked ass you could see fish swimming and coral reef dolphin all kinds of crap was just really impressive for back then.
